Raw Ginger Cookies

You can prepare these delicious cookies with the residue from making homemade almond milk, or you can use any type of nut you use to prepare a plant-based beverage.

They are delicious to accompany hot drinks like tea or infusions, or to have a nutritious and energizing snack throughout the day.

Ingredients for 10 servings

  • 1 1/4 cup almonds or any type of nut
  • 1/4 cup raisins or dried blueberries (soaked 20 min in filtered water)
  • 3 teaspoons of dehydrated ginger Munay
  • 1/2 fresh vanilla pod Munay (extract seeds)
  • 1 pinch of salt

Instructions

  1. Using a food processor or blender, crush the nuts for a few seconds. Add the rest of the ingredients and blend everything until it forms a homogeneous mixture.
  2. Shape into balls with your clean hands.
  3. Place the cookies in a covered container and leave it in the freezer for approximately one hour.
  4. Ready to enjoy! You can keep them in the same container in the refrigerator for approximately one week.
